I've heard of those who prefer canned crab meat vs fresh for crab cakes.
The crab that I buy is already cooked and is in a container but it is not the kind that is called "canned." I don't know if it's even legal to sell raw crab meat in our area if that is what you mean when you mention "fresh" crab meat. I've never seen raw crab meat that had already been extracted from the crab. Even the snow crab legs and Alaskan king crab legs that have been removed from the body but while leaving the meat inside the shell is cooked before the time of retail sale. Do you buy raw crab meat?
