Thanks, folks. We cook salmon once each week. Those two pieces are more than enough for the two of us, so we have leftover salmon to go into a pasta dish a few days later. Of course the asparagus all disappears. :)

We cook salmon once each week.

The same for my wife and me. We try to limit it to 1/4 pound each. That requires freezing the salmon that we don't cook the first time we open the package. My wife has apparently developed an allergy to Atlantic salmon but has no problem with Sockeye salmon. Fortunately, she prefers Sockeye salmon. I prefer Atlantic salmon, so I cook both kinds every time we eat salmon.

Unsophisticated, simple holiday dinner:
- pasta, fllled with ricotta and spinach - heed the heart shape ;)
- breaded, cheese filled pork
- salat: cucumber (who wonders?), tomatoes, peperoni

I make my breakfasts each day, and on Saturday, is usually scrambled eggs. I was rushing today, because I'm evaluating Lightroom Classic, so I didn't have much time to straighten and adjust these.

Surprise Visit...

We had a surprise visit from Theo today, while his mom and dad went shopping. They just moved into an apartment in the adjacent town, and needed to finish getting things. We graciously baby sat Theo. Here at lunch, eating Colby Jack cheese, chicken, and blueberries.

Besides swimming in a kiddie pool and chasing a cat, Theo loves to have you hold him up, so he can turn a light switch on... then off... then on... then off... then... well you get the point. Here, they were getting ready to leave and gave Theo a rare treat of a piece of a peanut butter and chocolate protein bar to tide him over, before dinner.

We had salad, and some left over spice cake, from my wife's birthday two weeks ago (frozen and then thawed).

Ingredients for tonight's one-dish supper -- Greek shrimp. The wine in the bottle is for enjoying with the meal. The Riesling in the measuring cup is in the recipe.

My wife and I went to a produce stand to get some fresh veggies and local corn. They were having a special on Hatch Chili’s from New Mexico, so we got some as well as some fresh corn.
