I love buying fresh hatch peppers when they are in season, grilling them, seeding and skinning them and then freezing what I do not use. My wife complains about how much freezer space they take up, but they are a great addition to so many dishes. And they do make awesome green chili cheeseburgers. (y)

Ken, I first found them on cheeseburgers at the Owl BaR and Grill in San Antonio, NM. Around 1982 I’d been tapped to teach a course in Socorro and would drive down to the Owl for a burger. Hated teaching, but loved those burgers. They sure were tasty.
Bosque is on my bucket list, and of course a stop at the Owl Bar would be included. We went to NM in 2016 to celebrate my beloved's milestone birthday and had a burger in Santa Fe, but is was just OK. We made some at home last year with fresh hatch peppers that I roasted and they were quite delicious. I would imagine the ones at the Owl would be even better.
