I'm looking for the minimum shutter speed for volleyball. Not to stop/freeze the ball, but rather to stop/freeze the players (jr high).

The question isn't what the minimum ss, it is what you can get by with your camera gear. You get to the event, make your settings in regards to ss and go up or down depending on your lens, ISO, and what you can tolerate in regards to blur and noise.

1/400 would be a good starting point but you may have to go down or up depending on the venue.

As high as you can go... depending on the age and ability of the players you may need at least 1/1000. But, depending on what you are shooting with you may not get there. So, the trade off will be a bit of blurring in the image if you cannot.
