I also advocate the non re-composing tip, learning to use the focus points for shallow depth of field shots is paramount.
This is something I've been doing since I first got the D300, using the focus points... kind of an instinctive decision and not something I did with the D70 before.

I always move it around and then recenter it after my shot(s) so it's back to the middle for the next time I start to compose for whatever subject. I don't really do the focus and then recompose, so I'm not sure how one way would affect my keepers.

Fo those who do this with the D300 and really shallow DOF, do you find any preference on using single vs. 9 pt vs. 21 pt?
